Hurry Up Alfredo:
You can never go wrong with things that are made in a blender, right? Right. This savory pasta sauce is the first on our list to try out.
What you will need:
1 cup soy milk
1/3 cup raw unsalted cashews
1/4 cup nutritional yeast
3 tbs low sodium tamari or soy sauce
2 tbsp earth balance margarine
1 tbs Tahini
1 tbs fresh lemon juice
2tsp dijon mustard
1/2 tsp paprika
1 pinch of nutmeg
2-4 garlic cloves
black pepper to taste
Add all of the ingredients into a blender and blend until smooth. Pour over cooked pasta and cook over medium heat until heated through. Add in any of your favorite veggies as well! The sauce is also very versatile, and can be used over veggies, over lasagna, or to use in casseroles.
Sun-dried Tomato and Basil Couscous with Aceto Balsamico
Second on the list is another simple recipe that would be perfect for a quick lunch or mid-day snack
What you will need:
3tsp olive oil
1/4 cup of salt
1/4 cup of chopped fresh basil
10-12 oil packed sun-dried tomatoes, chopped
1 cup couscous
1 cup boiling water
1/4 cup of toasted pine nuts
Aceto Balsmico di Modena (or any high quality balsamic glaze)
Boil 1/12 cups if water. In a bowl mix the olive oil, salt, basil, tomatoes, and couscous. Measure out 1 cup of boiling water and add to couscous mixture. Cover with plastic wrap and let sit for 5 minutes. While you wait for the couscous, toast the pine nuts, but make sure not to burn them! Lightly fluf the couscous with a fork, add in pine nuts and drizzle with balsamic glaze. This dish is fantastic warm, or at room temperature.
